½ cup low-fat plain Greek yogurt
2 densely packed cups fresh spinach
½ cup frozen pineapple chunks
½ cup frozen mango chunks
1 medium avocado, seeded, peeled and coarsely chopped
⅓ cup California walnuts, coarsely chopped
1 Tbsp fresh lime juice
1 cup cold water (or more to achieve your desired consistency)
Fresh pineapple wedges for garnish, optional
Place all ingredients into a high-powered blender. Blend until smooth and creamy. (Adjust consistency if desired with a little extra cold water.)
Serve immediately, garnished with fresh pineapple wedges if desired.
Note: For a smooth, creamy consistency, process in a Vitamix blender or similar.
