This salsa is so simple to make as starts with canned tomatoes. Roasted red peppers and jalapeno peppers add extra flavor, while toasted walnuts add extra crunch.
1/2 cup California walnuts, toasted and chopped
1/2 cup onion, chopped
3 tablespoons chopped fresh cilantro
2 teaspoons lime juice
1 teaspoon ground cumin
1/2 teaspoon sea salt
3 cloves garlic, minced
1 (14 1/2-oz.) can fire-roasted diced tomatoes, drained and chopped
1/2 jalapeno pepper, stemmed, seeded, and minced
Stir together all ingredients in a medium bowl. Cover and refrigerate until ready to serve.
