4 cups walnut halves (about 1 pound)
1 tablespoon coarse sea salt
½ teaspoon ground cinnamon
1 cup pure maple syrup
1 ½ tablespoons unsalted butter
1 tablespoon vanilla extract
Preheat oven to 350°F and line a large baking sheet with parchment paper. Spread walnuts in an even layer and toast for 10 minutes or until fragrant; let cool.
Stir together salt and cinnamon in a small bowl.
Place maple syrup, butter and vanilla in a large deep skillet. Bring to a boil over medium heat and cook for 5 minutes or until reduced to 2/3 cup. Stir in walnuts and reduce heat to low; toss well to coat evenly with maple mixture.
