These lightly sweet, no-bake granola bites are made with walnuts and tart cherries, ingredients that have been studied for their potential effect on sleep. Perfect for meal prep, they store well so you can keep a nourishing nighttime snack on hand.
2 cups California Walnuts
2 tsp neutral oil (such a canola, avocado, walnut or grapeseed oil)
½ tbsp maple syrup
2 tsp vanilla extract
½ cup instant/quick cooking oats
½ cup (3 oz) sweetened dried tart cherries, roughly chopped
Make the walnut butter by blending the walnuts, oil, maple syrup and vanilla extract together in a food processor.
Place the walnut butter in a bowl and mix in oats and chopped dried tart cherries.
Using your hands, grab about a tablespoon of the mixture and roll into balls. Refrigerate and enjoy the bites for up to 1 week.
