For the Spiced Walnuts

  • 1/2 cup chopped walnuts
  • 1 tbsp butter
  • 1 tsp brown sugar
  • 1/8 tsp cinnamon
  • 1/8 tsp cayenne
  • 1/8 tsp kosher salt

 

For the Pimento Cheese

  • 1 cup shredded cheddar
  • ½ cup shredded pepper jack
  • 2 tbsp pimentos, drained and minced
  • 1/4 cup greek yogurt (start light and add more)
  • Juice of 1/4 lemon (1 tsp)
  • Spiced walnuts

PREPARATION

  1. For the spiced walnuts, melt butter in a skillet on low-medium heat. Add walnuts and spices and stir frequently for about 4-5 minutes, until walnuts are fragrant and begin to brown. Remove from heat and allow to cool.
  2. Shred cheese by hand or a food processor. Chop pimentos if necessary.
  3. Add all ingredients together and mix well by hand.
