Ingredients

WALNUT BUTTER (makes ½ cup)

  • 1 cup California walnuts, toasted
  • 1/8 teaspoon salt
  • 2 teaspoons maple syrup
  • 3 teaspoons olive oil

STRAWBERRY MILK AND WALNUT SMOOTHIE

  • 1 cup frozen strawberries, sliced
  • 1/2 cup frozen banana, sliced
  • 1 tablespoon plus one teaspoon walnut butter (see recipe above)
  • 1-1/4 cup whole milk

PREPARATION

WALNUT BUTTER

  1. Combine all the ingredients in a food processor and process until smooth and creamy (about 5 minutes).
  2. Add 1/2 teaspoon of olive oil to the mixture until it reaches the consistency of peanut butter.
  3. Note: This recipe makes 1/2 cup of walnut butter. Use the extra walnut butter on toast, in oatmeal, and anywhere you’d typically use nut butter.
