A light and airy walnut-based whipped cream flavored with honey and vanilla. Serve over your favorite dessert, or over berries with additional California walnuts.
2 1/2 cups California walnuts, divided
1 cup water
3 tablespoons powdered sugar
1 to 2 teaspoons honey, divided
1 teaspoon vanilla extract
Pinch of salt
Puree 2 cups walnuts and water in a blender for 2 minutes or until very light and fluffy.
Add powdered sugar, 1 teaspoon honey, vanilla and salt and blend for 30 seconds. Add the remaining teaspoon honey if you prefer a sweeter taste.
To achieve a thicker whipped cream, add the remaining 1/2 cup walnuts and puree until light and fluffy.
Store tightly covered in the refrigerator until ready to use. May be prepared 2 days ahead.
Add 1 1/2 teaspoons cinnamon.
Add 1 teaspoon cinnamon, 1/8 teaspoon nutmeg and 1/8 teaspoon cloves.
Add 1 teaspoon pumpkin pie spice.
Add 1 teaspoon peppermint extract.
Add 1 teaspoon rum extract.
