Ingredients

  • 3 medjool dates, pitted

  • 1/2 cup California walnuts

  • 1-1/4 cups cold water

  • 2-1/2 tablespoons raw cacao powder

  • 1/4 teaspoon espresso powder

  • 1/4 teaspoon salt

  • 1 cup frozen cauliflower rice

  • 4 ice cubes

PREPARATION

  1. Place dates and walnuts in a high-speed blender. Pour water into the blender to cover the dates and walnuts. Let it sit for 5 minutes to soften the dates. Blend on high speed for 30 to 40 seconds, or until smooth.

  2. Add cacao powder, espresso powder, salt, cauliflower and ice cubes. Blend for another 30 to 40 seconds until smooth. Pour into glasses and enjoy.
