Description

A nutty oat granola with dried mixed berries and a fresh lemon flavor.

Ingredients

  • 1/4 cup honey

  • 2 tablespoons butter

  • 2 tablespoons brown sugar

  • 1/2 teaspoon lemon extract

  • 1 1/2 cups rolled oats (old-fashioned)

  • Finely grated zest of 1/2 lemon

  • 3/4 cup very coarsely broken California walnuts

  • 1/2 cup dried berry blend or a mixture of dried cherries, berries or plums

PREPARATION

  1. Preheat oven to 300°F. Melt honey, butter, brown sugar and extract together in a medium saucepan. Stir in oats, walnuts and lemon zest and transfer to a parchment-lined baking sheet. Spread into a 1-inch thick layer and press down lightly to compress.

  2. Bake for 30 minutes or until granola is golden brown. Remove from oven and turn oven off. Stir then press into a compact 1-inch layer again and return to warm oven for 10 minutes. Let cool completely, then break into pieces.

  3. Stir in dried fruit. Store in an airtight container.
