A nutty oat granola with dried mixed berries and a fresh lemon flavor.
1/4 cup honey
2 tablespoons butter
2 tablespoons brown sugar
1/2 teaspoon lemon extract
1 1/2 cups rolled oats (old-fashioned)
Finely grated zest of 1/2 lemon
3/4 cup very coarsely broken California walnuts
1/2 cup dried berry blend or a mixture of dried cherries, berries or plums
Preheat oven to 300°F. Melt honey, butter, brown sugar and extract together in a medium saucepan. Stir in oats, walnuts and lemon zest and transfer to a parchment-lined baking sheet. Spread into a 1-inch thick layer and press down lightly to compress.
Bake for 30 minutes or until granola is golden brown. Remove from oven and turn oven off. Stir then press into a compact 1-inch layer again and return to warm oven for 10 minutes. Let cool completely, then break into pieces.
Stir in dried fruit. Store in an airtight container.
