Buffalo Lettuce Wraps
DESCRIPTION
These no cook walnut meat buffalo lettuce wraps pack a flavorful punch in every crunchy bite!
Ingredients
Buffalo Walnut Meat
- 2 cups California walnuts*
*optional: soak in cool water for 20 minutes
- 1/4 cup vegan buffalo wing sauce
- 1/2 large onion, chopped
- 2 tablespoons nutritional yeast
- 1 tablespoon Vegan Chicken Bouillon Powder
- 1 teaspoon reduced sodium soy sauce
- 2 cloves garlic, minced
Lettuce Wraps
- 12 baby romaine lettuce leaves (Bibb, iceberg, or butter lettuce will also work)
- 3/4 cup tiny cubes carrot
- 2 celery stalks, cut into tiny cubes
- 1 small avocado, diced
- Vegan ranch dressing (optional topping)
Preparation
- To prepare Buffalo Walnut Meat, place walnuts in a food processor along with the remaining walnut meat ingredients. Pulse about 8 times until the walnuts are chopped to a ground meat texture, scraping down the sides as needed.
- To assemble lettuce wraps, rinse lettuce leaves and pat dry between paper towels. Lay in a single layer on a board or tray and scoop about 3 tablespoons of the walnut meat in the center of each.
- Sprinkle with carrots, celery, and avocado. Drizzle with ranch dressing, if desired.
