California Walnut & Garam Masala Shortbread
DESCRIPTION
The surprising spice of the garam masala in these dainty little cookies blends perfectly with the rich, nutty profile of California walnuts, creating the ultimate indulgence.
Ingredients
- 16 ounces butter, unsalted, room temperature
- 1 ¼ cups granulated sugar
- 1 ¼ teaspoons vanilla extract
- 3 cups all-purpose flour, sifted
- 1 cup California walnut meal (method below)
- ¼ cup California walnuts, chopped
- 2 teaspoons garam masala
- 2 teaspoons kosher salt
Preparation
- Take one cup of California walnuts and run them through a food processor until blended and ground fine into a flour. This will be used for the walnut meal.
- Place butter and sugar in stand mixer, then blend using paddle attachment until mixture is light yellow in color. Alternatively, blend with electric beaters.
- Add vanilla and sift in the flour, walnuts, walnut meal, garam masala and salt. Continue blending until everything is incorporated and blended.
- Remove the dough, then use a little bit of flour and work the dough into a sausage-like roll. Wrap in plastic and chill for 30-45 minutes so that the butter sets (if baked right away, the cookies will flatten out).
- Preheat oven to 350° F. Remove dough from fridge and slice into ½-inch circles, then place onto ungreased baking sheet and bake for about 20 minutes or until the cookies are slightly browned. Remove from oven and cool. Cookies will harden a bit more as they cool.
