California Walnut Smashburger
DESCRIPTION
This nutrient-packed burger can be used as a meat substitute for a traditional hamburger based sandwich build. Experiment with different flavor combinations and seasonings to come up with your own signature item.
Ingredients
California Walnut Smashburger
- 1 cup California walnuts
- ½ cup garbanzo beans, cooked
- 1/3 cup Panko bread crumbs
- 1 tablespoon apple cider vinegar
- 1 teaspoon seasoning salt
- 1 tablespoon vegetable oil
- 1 egg, whole
Bourbon Cherry Compote
- 1 cup cherry preserves
- 1 tablespoon bourbon whiskey
Assembly
- 4 tablespoons vegetable oil
- 4 Brioche hamburger buns
- 4 Walnut Smashburgers, portioned into 3-ounce patties
- 12 slices Brie cheese
- 1 cup Bourbon Cherry Compote
- 2 cups baby arugula, rinsed
Preparation
California Walnut Smashburger
- Place all ingredients in a food processor and pulse until the walnuts are about the size of a grain of rice.
- Portion into 3-ounce balls and press between two pieces of parchment paper to form a patty.
- Wrap tightly with plastic wrap and store under refrigeration until ready to use.
Bourbon Cherry Compote
- In a small sauce pan, combine all ingredients and bring to a boil.
- Cook until the alcohol is burned off, but the bourbon flavor remains--about 3 minutes.
- Remove from heat and allow to cool under refrigeration.
- Store under refrigeration until ready to use.
Assembly
- Preheat a flat-top griddle to 350°F.
- Once heated, drizzle with oil and toast the brioche buns and Smashburgers until golden.
- After the first flip, top each smashburger with Brie cheese and cook on the griddle until cheese is melted.
- Build each burger in the following order: 1 brioche bun heel, 1/8 cup of cherry compote, 1 walnut Smashburger, 3 slices of melted brie cheese, 1/8 cup of cherry compote, ¼ cup of arugula and 1 brioche bun top.
- Serve with your favorite side and enjoy.
