Ingredients

  • 2 cups California walnut shells, smoked
  • ½ cup black tea, powdered
  • 2 quarts ice, crushed
  • 1 each ginger root, medium, halved
  • 2 cups simple syrup
  • Ginger peel, candied, as needed

Preparation

  1. Place walnut shells and black tea powder in a very fine mesh strainer over a 4-quart container or pitcher filled with crushed ice. Cover with plastic wrap and let sit overnight, or until ice is completely melted. Discard tea and walnut shells.
  2. Meanwhile, steep ginger in simple syrup until desired flavor is achieved. Chill below 40° F.
  3. Combine cold brewed tea and simple syrup and mix well.
  4. Carbonate for 3 days with carbon dioxide.
  5. Serve over ice with candied ginger peel.
