Fruit & Walnut Muffins
DESCRIPTION
Moist and delicious fruit and nut muffin recipe with crunchy walnuts and blueberries mixed with the sweetness of molasses.
Ingredients
- Nonstick cooking spray
- 1 cup bran
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3/4 cup yogurt, plain, nonfat
- 1/2 cup brown sugar
- 1/3 cup egg substitute, low-cholesterol
- 1/3 cup applesauce
- 2 tablespoons molasses
- 3/4 cup (3 ounces) California walnuts, chopped
- 1 cup blueberries, frozen
Preparation
- Preheat the oven to 400ºF.
- Spray standard muffin tins with nonstick cooking spray.
- In a large bowl place the bran, flour, baking soda, baking powder, cinnamon and salt.
- Stir and toss the ingredients with a fork to combine thoroughly.
- In another bowl beat together the yogurt, brown sugar, egg substitute, applesauce, molasses and walnuts.
- Add to the dry ingredients and stir with a fork just until the batter is blended, about 20 seconds.
- Quickly stir in the blueberries.
- Spoon the batter into the prepared muffin tins, filling each cup about three-quarters full.
- Bake about 15 minutes, until the tops are golden and the muffins spring back when touched gently.
- Cool about 5 minutes in the pan, then remove.
