Ingredients
- 1/2 cup water
- 1/4 cup ground flaxseed
- 1 cup Monkfruit sweetener, date puree or granulated sugar
- 1/2 cup brown sugar
- 1/2 cup melted regular or vegan butter or coconut oil
- 1/3 cup unsweetened walnutmilk or plant milk of choice
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup non-dairy chocolate chips or roughly chopped chocolate pieces
- 1/2 cup chopped California Walnuts, plus additional for topping, if desired
Preparation
- Preheat oven to 350F and line a 9-inch baking pan with parchment paper; lightly grease and set aside.
- Whisk together water and ground flax in a large mixing bowl; let stand for 5 minutes.
- Add Monkfruit sweetener, date puree or granulated sugar, brown sugar, butter, milk and vanilla. Stir until well combined and smooth.
- Whisk together flour, cocoa powder, baking powder and salt in a medium bowl. Add to larger bowl and stir just until dry ingredients are incorporated. Stir in chocolate chips and walnuts.
- Spread batter evenly into prepared pan and sprinkle with additional walnuts if desired.
- Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Let cool completely in pan before cutting into 16 squares.
