Ingredients

Walnuts

  • 2 cups California walnuts, chopped
  • 1/3 cup maple syrup 
  • teaspoon sea salt + 1/4 teaspoon cinnamon 

Salad

  • 5 ounces baby arugula
  • 2 large lemons 
  • 3 tablespoon extra virgin olive oil 
  • 1/2 cup blueberries
  • ½ tsp Himalayan pink sea salt 
  • 1/3 cup golden raisins or cranberries (or a mix)
  • 1/2 cup feta cheese (or goat cheese)

Preparation

  1. Heat walnuts, maple syrup and seasonings in a skillet with a little oil over medium heat for about 5 minutes. You will notice the maple syrup mixture start to harden around the walnuts. Transfer to a parchment lined paper, spread them out good so they are separated, then allow them to harden.
  2. Meanwhile, prepare your salad. Toss the arugula in lemon, olive oil and sea salt. Then top with the rest of the salad ingredients, including your maple-candied walnuts!
