Lemon Arugula Salad with Maple Candied Walnuts, Feta Cheese & Blueberries
Ingredients
Walnuts
- 2 cups California walnuts, chopped
- 1/3 cup maple syrup
- teaspoon sea salt + 1/4 teaspoon cinnamon
Salad
- 5 ounces baby arugula
- 2 large lemons
- 3 tablespoon extra virgin olive oil
- 1/2 cup blueberries
- ½ tsp Himalayan pink sea salt
- 1/3 cup golden raisins or cranberries (or a mix)
- 1/2 cup feta cheese (or goat cheese)
Preparation
- Heat walnuts, maple syrup and seasonings in a skillet with a little oil over medium heat for about 5 minutes. You will notice the maple syrup mixture start to harden around the walnuts. Transfer to a parchment lined paper, spread them out good so they are separated, then allow them to harden.
- Meanwhile, prepare your salad. Toss the arugula in lemon, olive oil and sea salt. Then top with the rest of the salad ingredients, including your maple-candied walnuts!
