Ingredients

  • 1 pound chicken breasts, boneless, skinless, cut into thin bite-size strips
  • 1 teaspoon garam masala
  • 1 teaspoon garlic salt
  • 1 tablespoon olive oil
  • 1 cup red bell pepper, 1/2-inch cubes
  • 1 mango, ripe, peeled, pitted, cubed
  • 1/3 cup mango chutney
  • 1 tablespoon lime juice
  • 2 green onions, sliced
  • 1/2 cup California walnuts, toasted, coarsely chopped

Preparation

  1. Toss chicken with garam masala and garlic salt in a medium bowl.
  2. Heat olive oil in a large nonstick skillet over medium-high heat. Add chicken and cook for 5 to 7 minutes or until nicely browned on all sides.
  3. Add bell pepper and mango and cook for 5 more minutes.
  4. Stir in chutney and lime juice and cook for a few more minutes or until very hot.
  5. Stir in onions, top with walnuts and serve.
