Mango Chicken Skillet with Chutney and Walnuts
DESCRIPTION
Crunchy walnuts and sweet mango are the perfect pair in this quick chicken dish. Perfect over hot cooked couscous, or chill and serve as a salad over greens.
Ingredients
- 1 pound chicken breasts, boneless, skinless, cut into thin bite-size strips
- 1 teaspoon garam masala
- 1 teaspoon garlic salt
- 1 tablespoon olive oil
- 1 cup red bell pepper, 1/2-inch cubes
- 1 mango, ripe, peeled, pitted, cubed
- 1/3 cup mango chutney
- 1 tablespoon lime juice
- 2 green onions, sliced
- 1/2 cup California walnuts, toasted, coarsely chopped
Preparation
- Toss chicken with garam masala and garlic salt in a medium bowl.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add chicken and cook for 5 to 7 minutes or until nicely browned on all sides.
- Add bell pepper and mango and cook for 5 more minutes.
- Stir in chutney and lime juice and cook for a few more minutes or until very hot.
- Stir in onions, top with walnuts and serve.
