Smoked Walnut Blue Cheese Butter
DESCRIPTION
Smoked walnuts are paired with rich butter and blue cheese. Use to top vegetables, meat and poultry, or serve on baguettes as an appetizer.
Ingredients
- 1 cup chopped California walnuts
- 1 lb. softened unsalted butter
- 1 cup crumbled blue cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon Maldon Sea Salt or Smoked Sea Salt
Preparation
- Smoke walnuts with your favorite wood for 1 hour, or roast in the oven at 300°F for 20 minutes. Then, season with a large pinch of smoked paprika.
- Stir together all ingredients just until mixed.
- Transfer to a covered bowl, or roll into two (1-inch) logs on waxed or parchment paper. Chill until firm.
