Ingredients

  • 1 cup chopped California walnuts
  • 1 lb. softened unsalted butter
  • 1 cup crumbled blue cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Maldon Sea Salt or Smoked Sea Salt

Preparation

  1. Smoke walnuts with your favorite wood for 1 hour, or roast in the oven at 300°F for 20 minutes. Then, season with a large pinch of smoked paprika.
  2. Stir together all ingredients just until mixed.
  3. Transfer to a covered bowl, or roll into two (1-inch) logs on waxed or parchment paper. Chill until firm.
