This Spiced Berry-Walnut Cobbler combines a vibrant medley of frozen mixed berries and wild blueberries with warm spices, orange zest, and crunchy walnuts for an aromatic filling. Ingredients

Filling

  • 5 cups Frozen mixed berries
  • 2 cups Frozen wild blueberries
  • 1 cup Chopped California walnuts
  • 1/2 cup Sugar
  • 1/4 cup Cornstarch
  • 2 tbsp Orange juice
  • 1/4 tsp Ground cardamom
  • 1 tsp Ground cinnamon
  • 1 tsp Orange zest
  • 1 pinch Salt (1/8 tsp)

Biscuit Topping

  • 1 cup (3.5 oz) California walnuts
  • 1 cup Whole wheat flour
  • 1/4 cup Sugar
  • 2 tsp Baking powder
  • 1/4 cup Cold, unsalted butter, cubed
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground cardamom
  • 1/2 tsp Kosher salt
  • 3-4 tbsp Ice water
  • 1 tbsp Sugar to sprinkle on top

Preparation

  1. Preheat oven to 400°F.
  2. To prepare the filling, in a large mixing bowl, combine all ingredients for filling and stir together so that fruit is evenly coated with sugar, cornstarch, spices, and zest.
  3. Transfer to a 9x13 oven-proof baking dish and set aside.
  4. To prepare the biscuit dough, add walnuts to the bowl of a food processor and pulse to grind into a flour. Add flour, sugar, and baking powder and pulse for a few seconds to mix.
  5. Add cold butter, along with vanilla extract, cinnamon, cardamom, and salt. Turn on food processor to mix, gradually adding water, 1 tablespoon at a time until mixture comes together into a dough.
  6. Transfer dough to a clean surface and form into a log about 2" in diameter. Slice into rounds about 1/2" thick and place on top of filling mixture in a single layer.
  7. Sprinkle entire cobbler with remaining tablespoon of sugar.
  8. Bake for about 50 minutes or until biscuits start to brown.
  9. Serve while slightly warm!
