Ingredients

  • 1/4 cup whole California Walnuts

  • 7 ounces extra firm Tofu 

  • 1/4 cup Shiitake mushrooms

  • Caraway 2 pieces
  • 1/4 cup diced shallot

  • 1/2 teaspoon salt 

  • 1/4 teaspoon white pepper

  • 1/4 teaspoon white sugar

  • 1 teaspoon soy sauce
  • 2 teaspoons cornstarch

  • 1 tablespoon vegetable oil

  • 2 teaspoons vegetarian oyster sauce

  • 1/4 cup thinly sliced shallot

Preparation

  1. Divide tofu into 9 cubes and create a hole in the center of each cube without breaking it up. 

  2. Dice shiitake and chop the shallot and caraway. Fry or bake the California walnuts and hammer them into coarse grains in a bag. 

  3. Mix two-thirds of the California walnuts and diced shiitake. Add caraway and shallot, and the salt, sugar, starch and oil and mix them together. 

  4. Apply a thin layer of vegetarian oyster sauce on the internal wall of the tofu cubes. Add the stuffing and gently press it down. 

  5. Heat the pan and add some oil. Add the stuffed tofu cubes and grill them over medium heat until golden on both sides.

  6. Prepare the sauce with vegetarian oyster sauce, white pepper, starch, salt, sugar, soy sauce and 1/3 cup of water. Ensure the amount of sauce is sufficient. Add it to the pan so that it covers both sides of the grilled tofu. When the sauce becomes thicker, turn off the heat and serve. 

  7. Scatter remaining California walnuts and sliced shallot over the grilled tofu.
