Walnut “Orgeat”
DESCRIPTION
Use this as a cocktail base to add a nutty twist to your next drink.
Ingredients
2 cups raw California Walnuts
1 1/2 cups sugar
3 1/2 cups water
2 tablespoons apricot liqueur
1/2 teaspoon orange blossom water
Preparation
- Place walnuts in a medium size bowl. Cover with 3 1/2 cups water and let sit for 30 minutes. Drain well.
- In a food processor or blender, lightly pulse walnuts until they are coarsely ground.
- Stir together sugar and water in a pot and bring just to boil. Reduce heat to low and add ground walnuts; let simmer for 3 to 5 minutes. Remove from heat and let sit for 5 to 8 hours (overnight is best). Strain liquid into a 1 liter glass jar through a cheesecloth-lined strainer, pressing to extract as much as possible. Discard walnuts.
- Add apricot liqueur and orange blossom water and stir well. Cover and store in the refrigerator for up to 2 weeks.
