Ingredients

  • 1 cup chopped California walnuts
  • 1/2 cup plain low-fat yogurt
  • 2 tablespoons chopped flat leaf parsley
  • 1 1/2 teaspoons Dijon mustard
  • 1 small clove garlic, peeled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra-virgin olive oil

Preparation

  1. Combine walnuts, yogurt, parsley, mustard, garlic, salt and pepper in food processor. Process until walnuts are finely chopped.
  2. Add oil and process until mixture is smooth. You'll have about 1 1/2 cups dip. One serving equals 2 tablespoons.
