Walnut Parsley Dip
DESCRIPTION
This dip has a bright flavor. It pairs well with sweet vegetables, like red, orange or yellow bell pepper strips or sugar snap peas.
Ingredients
- 1 cup chopped California walnuts
- 1/2 cup plain low-fat yogurt
- 2 tablespoons chopped flat leaf parsley
- 1 1/2 teaspoons Dijon mustard
- 1 small clove garlic, peeled
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons extra-virgin olive oil
Preparation
- Combine walnuts, yogurt, parsley, mustard, garlic, salt and pepper in food processor. Process until walnuts are finely chopped.
- Add oil and process until mixture is smooth. You'll have about 1 1/2 cups dip. One serving equals 2 tablespoons.
