Walnut, Pear and Blue Cheese Dressing
DESCRIPTION
A sweet and savory creamy dressing flavored with walnuts, pears and blue cheese. Great over spring mix greens or butter lettuce with additional pears, blue cheese and walnuts.
Ingredients
- 1 large very ripe pear, peeled and cored
- 1/3 cup California walnuts
- 3 tablespoons olive oil
- 2 tablespoons cider vinegar
- 1 tablespoon lemon juice
- 3/4 teaspoon ground mustard
- 1/4 cup crumbled blue cheese
- Sea salt and freshly ground pepper to taste
Preparation
- Cut pears into wedges and place in a small saucepan with water to cover. Simmer for 10 minutes or until very soft. Drain and let cool.
- Puree pears, walnuts, olive oil, vinegar, lemon juice and mustard in a blender or food processor.
- Stir in blue cheese and season with salt and pepper.
