DESCRIPTION
“I started to update old family recipes to make them a bit more healthy. I came up with this holiday recipe of Cranberry Apple Walnut Crumble. I love crumble so I incorporate it into all the holiday recipes.”
Ingredients
- 6 (about 2 1/2 pounds) cooking apples
- 1,10-ounce bag cranberries, fresh
- 3/4 cup white sugar
- 1 1/4 cups brown sugar
- 1/2 cup (1 stick) plus 2 tablespoons butter, softened
- 1 cup flour
- 1 cup oatmeal, quick-cooking
- 1 1/2 cups California walnuts, chopped
- Vanilla ice cream or whipped cream, for serving
Preparation
- Peel and core the apples then cut them into chunks.
- Put the apples and cranberries in a large pan with the white sugar, stir to combine, then cover and place over medium-low heat for about 15 minutes, stirring two or three times. The apples should be soft not mushy. Transfer the fruit to a 13 x 9-inch baking dish and let cool while you prepare the topping.
- Preheat the oven to 350°F. In a bowl blend the brown sugar and butter, then add the flour and oatmeal and mix until it resembles very coarse crumbs. Stir in the chopped walnuts.
- Sprinkle the crumbly mixture over the fruit. Bake 30–35 minutes or until golden brown on top and the juices are bubbling.
- Serve with vanilla ice cream or whipped cream.
