Cranberry Raspberry Parfaits With Maple Candied Walnuts
DESCRIPTION
Cranberries, raspberries, Greek yogurt and maple flavored California walnuts team up for this holiday parfait.
Ingredients
- 12 oz Fresh cranberries
- 1/2 cup Lightly packed light brown sugar
- 1/2 cup Water
- 1/4 tsp Ground ginger
- Pinch Kosher salt
- 1/2 cup Raspberry jam
- 12 oz Fresh raspberries
- 2 cups Plain Greek yogurt
- 1 1/2 cups Maple candied California walnuts, divided
Preparation
- Stir together cranberries, sugar, water, ginger and salt in a medium saucepan. Bring to a simmer over medium heat; reduce heat and cook for 10 minutes, stirring occasionally.
- Remove from heat and stir in jam and fresh raspberries; set aside to cool. (May be prepared up to 3 days in advance and stored covered in the refrigerator.)
- Finely chop 1 cup maple candied walnuts and set aside remained 1/2 cup.
- To assemble parfaits, place 1/4 cup yogurt at the bottom of a parfait glass. Top with ¼ cup cranberry raspberry compote and 1/4 cup chopped candied walnuts. Repeat with yogurt and top with more compote and reserved candied walnuts. Repeat with remaining ingredients to make 3 more parfaits.
