Ingredients

  • 12 oz Fresh cranberries
  • 1/2 cup Lightly packed light brown sugar
  • 1/2 cup Water
  • 1/4 tsp Ground ginger
  • Pinch Kosher salt
  • 1/2 cup Raspberry jam
  • 12 oz Fresh raspberries
  • 2 cups Plain Greek yogurt
  • 1 1/2 cups Maple candied California walnuts, divided

Preparation

  1. Stir together cranberries, sugar, water, ginger and salt in a medium saucepan. Bring to a simmer over medium heat; reduce heat and cook for 10 minutes, stirring occasionally.
  2. Remove from heat and stir in jam and fresh raspberries; set aside to cool. (May be prepared up to 3 days in advance and stored covered in the refrigerator.)
  3. Finely chop 1 cup maple candied walnuts and set aside remained 1/2 cup.
  4. To assemble parfaits, place 1/4 cup yogurt at the bottom of a parfait glass. Top with ¼ cup cranberry raspberry compote and 1/4 cup chopped candied walnuts. Repeat with yogurt and top with more compote and reserved candied walnuts. Repeat with remaining ingredients to make 3 more parfaits.
  5. Recipe tip: Feel free to stir raspberries and jam into your favorite premade canned or jarred cranberry sauce.
