Crunchy Cheddar Walnut Crackers
DESCRIPTION
Brown rice flour adds a wonderfully crispy texture to these crackers. A great recipe to make with kids. Let them poke holes in the dough and cut with a pizza cutter!
Ingredients
- 1 cup Cheddar cheese, sharp, shredded
- 1/3 cup flour
- 1/3 cup brown rice flour
- 1/3 cup whole-wheat flour
- 3 tablespoons extra virgin olive oil
- 1 1/2-2 tablespoons ice water
- 3/4 teaspoon seasoned salt
- 1/2 cup California walnuts
Preparation
- Place cheese, flours, olive oil, 1 1/2 tablespoon water and salt in a food processor. Process until mixture is soft and sticks together when pressed between your fingers, adding more water if mixture is dry.
- Add walnuts and pulse to finely chop. Cover and chill for at least 1 hour.
- Preheat the oven to 375ºF and line 2 baking sheets with parchment paper.
- Roll dough 1/8-inch thick on a floured crust. Cut into 3/4-inch squares and place on prepared baking sheets. Poke a hole in the center of each with the flat end of a bamboo skewer.
- Bake for 10 to 12 minutes or until crackers are lightly browned around the edges.
