Brown rice flour adds a wonderfully crispy texture to these crackers. A great recipe to make with kids. Let them poke holes in the dough and cut with a pizza cutter!

Ingredients

  • 1 cup Cheddar cheese, sharp, shredded
  • 1/3 cup flour
  • 1/3 cup brown rice flour
  • 1/3 cup whole-wheat flour
  • 3 tablespoons extra virgin olive oil
  • 1 1/2-2 tablespoons ice water
  • 3/4 teaspoon seasoned salt
  • 1/2 cup California walnuts

Preparation

  1. Place cheese, flours, olive oil, 1 1/2 tablespoon water and salt in a food processor. Process until mixture is soft and sticks together when pressed between your fingers, adding more water if mixture is dry.
  2. Add walnuts and pulse to finely chop. Cover and chill for at least 1 hour.
  3. Preheat the oven to 375ºF and line 2 baking sheets with parchment paper.
  4. Roll dough 1/8-inch thick on a floured crust. Cut into 3/4-inch squares and place on prepared baking sheets. Poke a hole in the center of each with the flat end of a bamboo skewer.
  5. Bake for 10 to 12 minutes or until crackers are lightly browned around the edges.
