Ingredients

  • 4 cups walnut halves (about 1 pound)
  • 1 tablespoon coarse sea salt
  • ½ teaspoon ground cinnamon
  • 1 cup pure maple syrup
  • 1 ½ tablespoons unsalted butter
  • 1 tablespoon vanilla extract

Preparation

  1. Preheat oven to 350°F and line a large baking sheet with parchment paper. Spread walnuts in an even layer and toast for 10 minutes or until fragrant; let cool.
  2. Stir together salt and cinnamon in a small bowl.
  3. Place maple syrup, butter and vanilla in a large deep skillet. Bring to a boil over medium heat and cook for 5 minutes or until reduced to 2/3 cup. Stir in walnuts and reduce heat to low; toss well to coat evenly with maple mixture.
  4. Remove from heat and sprinkle salt mixture over walnuts; stir until evenly coated. Spread on a parchment-lined baking sheet to cool completely. Store in an airtight container.
