Ingredients

Spiced Walnut Coconut Cream Soda

  • 1/2 cup walnut syrup, recipe follows
  • 1 quart soda water
  • 1/4 cup coconut cream

Walnut Syrup

  • 1 cup water
  • 1/2 cup raw sugar
  • 1 split vanilla bean
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/8 teaspoon cream of tartar
  • 1 cup toasted California walnuts

Preparation

Spiced Walnut Coconut Cream Soda

  1. To make walnut syrup, combine water, raw sugar, split vanilla bean, cinnamon and salt in saucepan; heat to low boil.
  2. Add cream of tartar and simmer 5 minutes. Off heat, steep 5 minutes.
  3. Remove vanilla bean and transfer to blender; add toasted California walnuts and process until smooth. Chill before using.
  4. Fill tall glasses with ice. Add 2 tablespoons walnut syrup and top with 8 ounces soda water.
  5. Spoon 1 tablespoon coconut cream over each.
