Thai Chili & Garlic Walnut Whole Grain Noodle Salad
DESCRIPTION
These vibrant Asian chili garlic noodles are a must in your weeknight dinner repertoire. Crunchy walnuts, diced chicken, bell peppers, and green onions are tossed with a subtly spicy sauce – count on family and friends asking for seconds!
Ingredients
- 4 cups whole grain spaghetti, cooked
- 1 cup California walnuts
- 1 cup chicken, low-sodium, diced
- 1 cup green onions, fresh, sliced
- 1 cup bell peppers, fresh, diced
- ¼ cup + 2 tablespoons lemon juice
- 3 tablespoons soy sauce, low-sodium
- 1 tablespoons Thai chili & garlic sauce
- 2 tablespoons cilantro, fresh
Preparation
- Cook whole grain spaghetti according to package directions. Drain well and set aside.
- Chop California walnuts into bite size pieces and set aside.
- Heat the oil in a large nonstick skillet over medium-high heat. Add the diced chicken and cook, stirring frequently, for 3-4 minutes.
- Combine the chicken, spaghetti, sliced green onions, diced bell peppers and chopped walnuts in a large bowl.
- In a small bowl, whisk together lemon juice, soy sauce and Thai chili & garlic sauce.
- Toss sauce mixture with noodles to mix well.
- Wash cilantro and lightly pat between two paper towels to dry. Pull leaves from stems sprinkle pasta with cilantro leaves. Serve immediately.
