Ingredients

  • 2 1/2 cups California walnuts, divided
  • 1 cup water
  • 3 tablespoons powdered sugar
  • 1 to 2 teaspoons honey, divided
  • 1 teaspoon vanilla extract
  • Pinch of salt

Preparation

  1. Puree 2 cups walnuts and water in a blender for 2 minutes or until very light and fluffy.
  2. Add powdered sugar, 1 teaspoon honey, vanilla and salt and blend for 30 seconds. Add the remaining teaspoon honey if you prefer a sweeter taste.
  3. To achieve a thicker whipped cream, add the remaining 1/2 cup walnuts and puree until light and fluffy.
  4. Store tightly covered in the refrigerator until ready to use. May be prepared 2 days ahead.

Cinnamon

  1. Add 1 1/2 teaspoons cinnamon.

Nutcracker Spice

  1. Add 1 teaspoon cinnamon, 1/8 teaspoon nutmeg and 1/8 teaspoon cloves.

Pumpkin Pie Spice

  1. Add 1 teaspoon pumpkin pie spice.

Peppermint

  1. Add 1 teaspoon peppermint extract.

Rum

  1. Add 1 teaspoon rum extract.
