Walnut, Berry & Beetroot Smoothie Bowl

Ingredients
- 1/2 cup cooked beetroot
- 2/3 cup frozen mixed berries
- 2 tablespoons oats
- 1 teaspoon freshly grated ginger
- 1-2/3 cup homemade California walnut milk
- 1/3 cup fresh blueberries
- 1/2 cup California walnuts
- 2 sprigs fresh mint leaves
Preparation
- Place the beetroot, frozen berries, oats and ginger into a blender. Pulse until nearly smooth.
- Add walnut milk to the blender and blend until smooth.
- Pour the smoothie into 2 bowls and arrange the fresh blueberries, walnuts and mint leaves on top in an attractive pattern to serve.
