Walnut Broccoli Salad with Poppy Seed Dressing

Ingredients
Dressing
- 1/2 C Olive oil
- 1/4 C Vinegar, champagne or white wine
- 1 Tbsp Honey
- 1 tsp Poppy seeds
- Salt and pepper to taste
Salad
- 6 C Broccoli florets, bite-sized pieces
- 1 1/2 C California walnuts, toasted
- 4 strips Bacon, cooked and roughly chopped
- 1 C Red grapes, halved or quartered
- 1/2 C Red onion, julienne strips
Preparation
- To prepare dressing, whisk together oil, vinegar, honey and poppy seeds in a small bowl, season to taste with salt and pepper.
- Lightly toss the salad ingredients together in a large bowl; drizzle with dressing toss again to coat. (May be prepared several hours in advance and stored tightly covered in the refrigerator.)
