Ingredients

  • 3 large eggs
  • 1-3/4 cups unsweetened applesauce
  • 1/2 cup pure maple syrup
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons canola oil
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup ground flaxseed
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped California walnuts

Preparation

  1. Preheat oven to 325°F.
  2. Spray two 8x4 inch loaf pans with nonstick cooking spray and set aside.
  3. In a large mixing bowl, whisk together eggs, applesauce, maple syrup, Greek yogurt and canola oil.
  4. In a separate medium bowl, combine whole wheat flour, all-purpose flour, ground flaxseed, ground cinnamon, baking soda, baking powder, nutmeg and salt. Add mixture of dry ingredients to wet ingredients and stir them together. Fold in walnuts.

  6. Garnish with whole walnut halves, slice and serve.
