Ingredients

  • ½ cup low-fat plain Greek yogurt
  • 2 densely packed cups fresh spinach
  • ½ cup frozen pineapple chunks
  • ½ cup frozen mango chunks
  • 1 medium avocado, seeded, peeled and coarsely chopped
  • ⅓ cup California walnuts, coarsely chopped
  • 1 Tbsp fresh lime juice
  • 1 cup cold water (or more to achieve your desired consistency)
  • Fresh pineapple wedges for garnish, optional

Preparation

  1. Place all ingredients into a high-powered blender. Blend until smooth and creamy. (Adjust consistency if desired with a little extra cold water.)
  2. Serve immediately, garnished with fresh pineapple wedges if desired.
  3. Note: For a smooth, creamy consistency, process in a Vitamix blender or similar.
