Roasted Pepper and Walnut Hummus
DESCRIPTION
Fast and easy hummus recipe with a wonderful blend of flavors from toasted walnuts, sun-dried tomatoes and roasted peppers.
Ingredients
- 2 cups cooked garbanzo beans, rinsed
- 1 tablespoon garlic, chopped fine
- 1/4 cup lemon juice
- 4 whole sun-dried tomatoes in oil
- 1/2 cup toasted California walnuts
- 3 whole roasted red peppers
- 1 teaspoon kosher salt
- A dash of white pepper
- 2 tablespoons of parsley
- 1 tablespoon of Dijon mustard
- 1/4 cup pomegranate juice
- 1/4 cup extra-virgin olive oil
Preparation
- Blend in food processor; while food processor is going add 1/4 cup extra-virgin olive oil.
- Serve with pita bread.
