Ingredients

  • 4 cups whole grain spaghetti, cooked
  • 1 cup California walnuts
  • 1 cup chicken, low-sodium, diced
  • 1 cup green onions, fresh, sliced
  • 1 cup bell peppers, fresh, diced
  • ¼ cup + 2 tablespoons lemon juice
  • 3 tablespoons soy sauce, low-sodium
  • 1 tablespoons Thai chili & garlic sauce
  • 2 tablespoons cilantro, fresh

Preparation

  1. Cook whole grain spaghetti according to package directions. Drain well and set aside.
  2. Chop California walnuts into bite size pieces and set aside.
  3. Heat the oil in a large nonstick skillet over medium-high heat. Add the diced chicken and cook, stirring frequently, for 3-4 minutes.
  4. Combine the chicken, spaghetti, sliced green onions, diced bell peppers and chopped walnuts in a large bowl.
  5. In a small bowl, whisk together lemon juice, soy sauce and Thai chili & garlic sauce.
  6. Toss sauce mixture with noodles to mix well.
  7. Wash cilantro and lightly pat between two paper towels to dry. Pull leaves from stems sprinkle pasta with cilantro leaves. Serve immediately.
