How to Make Walnut Meat
In a food processor, simply combine walnuts, your choice of legume or mushrooms, and any combination of spices to fit your craving. Transfer the mixture to a lightly oiled skillet and brown just as you would any other ground meat. The end result will be a delicious, plant-based meat crumble you can use in a variety of ways.

One ounce of walnuts contain 18g of total fat, 2.5g of monounsaturated fat, 13g of polyunsaturated fat including 2.5g of alpha-linolenic acid—the plant-based omega-3 ALA (that’s more than any other nut!). One ounce of walnuts also provides 4g of protein, 2g fiber and a good source of magnesium (45mg). So grab a handful of walnuts or add them to any snack recipe for added crunch and nutrition.
