Ingredients

  • 1 cup shelled walnuts, plus more for garnish if desired

  • 1 can no salt added black beans (15.5-ounces), drained and rinsed

  • 3 tablespoons pure maple syrup

  • 2 teaspoons pure vanilla extract

  • 3 tablespoons unsweetened cocoa powder

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

Preparation

  1. Preheat oven to 350°F and arrange walnuts evenly on a small baking sheet. Bake 8-10 minutes, checking frequently, until toasted.

  2. In the bowl of a food processor, combine toasted walnuts, black beans, maple syrup, vanilla extract, cocoa powder, cinnamon and salt. Process 1-2 minutes, stopping to scrape the sides of the bowl as needed, until mixture is smooth. Makes 1 ½ cup.

  3. Serve with sliced bananas, pears, strawberries, apples or graham crackers.
