These no cook walnut meat buffalo lettuce wraps pack a flavorful punch in every crunchy bite!
2 cups California walnuts*
*optional: soak in cool water for 20 minutes
1/4 cup vegan buffalo wing sauce
1/2 large onion, chopped
2 tablespoons nutritional yeast
1 tablespoon Vegan Chicken Bouillon Powder
1 teaspoon reduced sodium soy sauce
2 cloves garlic, minced
12 baby romaine lettuce leaves (Bibb, iceberg, or butter lettuce will also work)
3/4 cup tiny cubes carrot
2 celery stalks, cut into tiny cubes
1 small avocado, diced
Vegan ranch dressing (optional topping)
To prepare Buffalo Walnut Meat, place walnuts in a food processor along with the remaining walnut meat ingredients. Pulse about 8 times until the walnuts are chopped to a ground meat texture, scraping down the sides as needed.
To assemble lettuce wraps, rinse lettuce leaves and pat dry between paper towels. Lay in a single layer on a board or tray and scoop about 3 tablespoons of the walnut meat in the center of each.
Sprinkle with carrots, celery, and avocado. Drizzle with ranch dressing, if desired.
