DESCRIPTION

This fluffy dip gets its great flavor from shallots and fresh herbs. It’s great for entertaining as it may be prepared several days ahead. Serve with veggies or crackers.

Ingredients

  • 2 Garlic cloves

  • 2 C California walnuts (slightly heaping)

  • 1 C Water

  • 1/3 C Shallots, thinly sliced

  • 1/4 C Italian parsley leaves, lightly packed, divided

  • 3 Tbsp Fresh rosemary or thyme leaves, divided

  • 3 Tbsp Nutritional yeast

  • 1 tsp. Sea salt

  • 2 Green onion tops

  • Freshly ground pepper to taste (preferably smoked pepper)

Preparation

  1. Drop garlic into a high-speed blender container with the motor running.

  2. Add walnuts, water, shallots, 2 tablespoons parsley leaves, 2 tablespoons fresh thyme leaves, nutritional yeast, salt and green onion tops. Blend until light and fluffy, scraping down the sides as needed.

  3. Add remaining herbs and pulse to chop. Season with pepper. (May be prepared 3 days ahead and stored tightly covered in the refrigerator.)
