Ingredients

  • 1 small or 1/2 large apple, shredded

  • 1 cup of shredded sweetpotatoes (about 3 ounces)

  • 2/3 cup of old fashioned oats

  • 1/2 teaspoon of cinnamon

  • 1/4 teaspoon of salt

  • 2 tablespoons of chopped walnuts

  • Milk or milk alterantive, for serving

  • Sweetener, for serving (Honey, maple syrup, agave, whatever you like)

Preparation

  1. Set aside about 2 tablespoons of the shredded apple.

  2. In a medium saucepan over medium heat, combine the remaining apple, sweetpotatoes, oats, cinnamon, salt, and 1 1/2 cups water. Bring to a boil, reduce to a low simmer, and cook, stirring occasionally, until done to your liking, 5 to 10 minutes depending on the brand (use package instructions as a guide). (Alternatively, combine the ingredients in a large microwaveable bowl and microwave on high 2 to 3 minutes, depending on the brand.)

  3. Divide the mixture between two bowls and top with the nuts and reserved apple. Serve with milk and sweetener alongside.

  4. Note: If you have some cooked grains on hand—quinoa, farro, or barley, for example—toss in up to 1/2 cup during the last few minutes of cooking. You can also add chopped dried fruit, coconut, or both!
