Ingredients

  • 1 cup chopped California walnuts

  • 1 cup granola

  • 1 cup white chocolate chips

  • 1 (32-oz.) container low fat vanilla Greek yogurt

  • 1/2 cup fresh blueberries

  • 9 California walnut halves

  • 1 1/2 cups sliced fresh strawberries

Preparation

  1. Line the bottom and sides of a 13 X 9-inch baking dish with foil or parchment paper.

  2. Stir together chopped walnuts, granola, chocolate chips and yogurt in a large bowl, then spread evenly in pan. Freeze for 1 hour.

  3. Place blueberries and walnuts in the upper left corner then add strawberry stripes. Press fruit lightly into the surface. Place back in the freezer for several hours or until firm.

  4. Remove from freezer and let stand at room temperature for 15 minutes. Lift foil to remove from pan and place on a cutting board. Dip a long knife into hot water and carefully dry. Cut into 16 bars, dipping the knife in hot water as needed. Serve immediately.
