Ingredients

  • 1/2 cup water

  • 1/4 cup ground flaxseed

  • 1 cup Monkfruit sweetener, date puree or granulated sugar

  • 1/2 cup brown sugar

  • 1/2 cup melted regular or vegan butter or coconut oil

  • 1/3 cup unsweetened walnutmilk or plant milk of choice

  • 2 teaspoons vanilla extract

  • 1 cup all-purpose flour

  • 1 cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup non-dairy chocolate chips or roughly chopped chocolate pieces

  • 1/2 cup chopped California Walnuts, plus additional for topping, if desired

Preparation

  1. Preheat oven to 350F and line a 9-inch baking pan with parchment paper; lightly grease and set aside.

  2. Whisk together water and ground flax in a large mixing bowl; let stand for 5 minutes.

  3. Add Monkfruit sweetener, date puree or granulated sugar, brown sugar, butter, milk and vanilla. Stir until well combined and smooth.

  4. Whisk together flour, cocoa powder, baking powder and salt in a medium bowl. Add to larger bowl and stir just until dry ingredients are incorporated. Stir in chocolate chips and walnuts.

  5. Spread batter evenly into prepared pan and sprinkle with additional walnuts if desired.

  6. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Let cool completely in pan before cutting into 16 squares.
