A flaky puff pastry topped with sweet, caramelized onions, creamy crumbled goat cheese, and toasted walnuts. Perfect as a cozy holiday appetizer or an easy, elegant snack.
1 sheet puff pastry, thawed
1 tablespoon olive oil
1 large yellow onion, thinly sliced
Salt and pepper, to taste
1–2 teaspoons balsamic vinegar or water (optional, for deglazing)
4 ounces goat cheese, crumbled
1/3 cup walnuts, roughly chopped and toasted
1 egg (for egg wash)
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a skillet, heat olive oil over medium heat. Add sliced onions and cook slowly, stirring often, until deep golden and caramelized, about 10–12 minutes. Season with salt and pepper and deglaze with balsamic or water if desired.
Roll out your puff pastry sheet and place it on the prepared baking sheet. Lightly score a 1-inch border around the edges without cutting through.
Spread the caramelized onions evenly inside the border.
Sprinkle crumbled goat cheese over the onions, followed by the toasted walnuts.
Brush the edges of the pastry with the beaten egg.
Bake for 18–22 minutes, or until the pastry is puffed and golden brown.
