Smoked walnuts are paired with rich butter and blue cheese. Use to top vegetables, meat and poultry, or serve on baguettes as an appetizer.
1 cup chopped California walnuts
1 lb. softened unsalted butter
1 cup crumbled blue cheese
2 tablespoons chopped fresh parsley
1 teaspoon Maldon Sea Salt or Smoked Sea Salt
Smoke walnuts with your favorite wood for 1 hour, or roast in the oven at 300°F for 20 minutes. Then, season with a large pinch of smoked paprika.
Stir together all ingredients just until mixed.
Transfer to a covered bowl, or roll into two (1-inch) logs on waxed or parchment paper. Chill until firm.
