These walnut energy bites are portable, delicious bite-sized snacks!
1 1/2 cups rolled oats
1 cup California walnuts
1/2 cup tahini
1/2 cup dried blueberries
3 tablespoons pure maple syrup
1 teaspoon vanilla extract
Pinch of salt
1/4 cup dark chocolate chips
1 teaspoon coconut oil
2 tablespoons each: chopped walnuts & freeze dried blueberries (topping)
Place oats, walnuts, tahini, dried blueberries, maple syrup, vanilla extract and salt in a food processor. Pulse for 45 to 90 seconds, scraping the sides down several times as needed.
Transfer to a bowl and roll into 24 equal balls (about tablespoon). Place close together on a parchment-lined baking sheet and refrigerate for 30 minutes to set.
Microwave chocolate chips and coconut oil on 50% power in a small bowl for about 1 minute, stirring once or twice. Drizzle over energy bites and sprinkle with chopped walnuts and freeze dried blueberries.
Store in a covered container in the freezer for up to 2 months, or refrigerate for up to 2 weeks.
