A sweet and savory creamy dressing flavored with walnuts, pears and blue cheese. Great over spring mix greens or butter lettuce with additional pears, blue cheese and walnuts.
1 large very ripe pear, peeled and cored
1/3 cup California walnuts
3 tablespoons olive oil
2 tablespoons cider vinegar
1 tablespoon lemon juice
3/4 teaspoon ground mustard
1/4 cup crumbled blue cheese
Sea salt and freshly ground pepper to taste
Cut pears into wedges and place in a small saucepan with water to cover. Simmer for 10 minutes or until very soft. Drain and let cool.
Puree pears, walnuts, olive oil, vinegar, lemon juice and mustard in a blender or food processor.
Stir in blue cheese and season with salt and pepper.
