Classic onion rings get a nutty, savory upgrade with California Walnuts. A light, sparkling water batter gives these rings a crisp coating, while ground California walnuts bring a rich, crunchy flavor to every bite. These walnut-crusted onion rings are a delicious new take on an American favorite, perfect as an appetizer or a fun side. Eat on their own or serve with a dipping sauce like green CA Walnut ketchup.
75-100 gm. onion rings, 3-4 inches diameter, 1/4” wide slice
80 gm. all purpose flour
10 gm. cornstarch
7 gm. kosher salt
200 gm. sparkling water, cold
100 gm. all purpose flour
10 gm. cornstarch
100 gm. California walnuts, raw, chopped fine
Whisk the flour, cornstarch, salt, and water together until smooth.
The consistency should be that of thick, cold, heavy cream. (It will thicken slightly if you let it rest for 5 minutes before using it.)
Whisk together flour and cornstarch in one bowl/pan.
Add Walnuts to a different bowl/pan.
Lightly coat rings with flour mixture.
Dip into the batter, and drain the excess batter.
Lightly coat rings with ground walnut mixture.
Fry at 325ºF/165° C until brown and crispy. (About 2 – 2 1/2 minutes)
