Ingredients

  • 12 ounces California walnuts

  • 8 ounces dried whole dates

  • 1-2 teaspoons walnut oil (optional)

Preparation

  1. Pit the dates and remove the stems. In a blender or food processor, blend until a thick paste forms. Set aside in a bowl.

  2. Ina blender or food processor, grind the walnuts for 3-4 minutes until the mixture becomes sticky or paste-like.

  3. Add the date paste and blend until the butter forms.

  4. If the mixture is still dry, add 1-2 teaspoons of walnut oil and blend until smooth.

  5. Spoon the butter into a container with a lid, seal, and store in the refrigerator until ready to use.

  6. Option: This version tastes just as good with dried figs, cranberries, blueberries or prunes as it does with dates.
