A light yet flavorful spin on chicken salad!
2 cups rotisserie chicken, shredded
½ cup plain Greek-style yogurt
3 Tbsp grainy dijon mustard
2 Tbsp honey
⅓ cup California walnuts, chopped
½ cup diced apple
¼ cup diced red onion
¼ cup diced celery
salt and pepper, to taste
Shred your chicken and chop into bite-sided pieces. Set aside.
In a large bowl, mix together your yogurt, mustard, and honey until smooth.
Add chicken, walnuts, apple, onion, and celery to the bowl. Season well with salt and pepper, then stir everything to combine. Store in the refrigerator in an airtight container for up to 4 days.”
